Frittata
If you’ve been around for a minute you know that my favorite meal of the day is BRUNCH. Wake me up at 10 am and hand me a latte and a brunch spread and I will love you forever. Today we’re making one of my favorite brunch items: the Frittata. This is an Italian egg dish that is essentially a crustless quiche! I give it a buttery-parm base to give it a little crunch on the outside and then it’s packed full of whatever veggies and toppings your heart desires on the inside! In this video you’ll get the basic “base” that you need for an ideal consistency and then a general guideline on the quantities that I would put in to pack it full of your favorite goodies. INGREDIENTS
Base:
6 Large Eggs
1/3 cup of Heavy Cream
2 Tsp Salt
2 TBSP Butter
1 Cup of Parm
Optional Add Ins:
1 Cup Shredded Mozzarella and Cheddar Blend
1 Cup of Arugula
1/2 Cup of Roasted Red Peppers
1/2 Cup of Marinated Artichoke Hearts
4 Strips Cup of Bacon (cooked and chopped)
DIRECTIONS
Pre-heat your oven to 375ºF.
In a 9x13 baking pan, use a few tablespoons of softened butter to coat the pan (you could use pan spray if you’d prefer) and then sprinkle in 1 cup of Parm. Tap the pan to coat the bottom and sides with Parm like you would if you were flouring a cake pan. This creates the bottom crust.
In a large bowl, combine 6 large eggs, 1/2 teaspoon of salt and 1/3 cup of heavy cream. Whip this together with a fork.
In your baking dish, arrange your 3-4 inclusions. I recommend using about a half cup of each. I layered: 1/2 cup of roasted red peppers, 1/2 cup of marinated artichoke hearts, 4 strips of cut and cooked bacon, 1/2 cup of the mozzarella and cheddar blend, 1 cup of arugula and then finished it off with the remaining 1/2 cup of cheese blend.
Now pour your egg mixture right over the top, making sure to pour it evenly over the entire pan.
Bake your dish for 20-25 minutes or until the eggs are done. If you’re unsure, slide a knife or pick through it and if it comes out clean, it’s done.
Let it set for 10-15 minutes and then slice and serve!
