Mila’s Quick and Easy Queso

Cinco de Mayo is this weekend and I am back with another easy recipe to help you celebrate!  This quick and easy Queso is a *slightly* healthier alternative to your local restaurant Queso and I think your kids will LOVE it just as much as mine do.  This quick and easy queso only takes about 10 minutes to make and is a perfect appetizer, snack or addition to your taco Tuesday.

INGREDIENTS

2 Cups of Heavy Whipping Cream

2 Cups of Quesadilla Cheese (Chihuahua)

1/4 Cup of Mild Fire-Roasted Chiles

1 TSP of Chipotle

1 TSP of Chili Powder

1 TSP of Garlic Powder

1 TSP of Smoked Paprika

1 TBSP of Cumin

1 TSP of Salt

DIRECTIONS

  1. Combine 2 cups of Heavy Whipping Cream, 1/4 cup of Mild Fire-Roasted Chiles and all of your spices into a pot.

  2. Place your pot on the stove and bring it to medium-high heat.

  3. Stir gently and bring it to a simmer.

  4. Once your cream is simmering, add your cheese, stir and bring it up to a simmer again.

  5. Let it simmer for 3-5 minutes and continue stirring, scraping the bottom often, making sure that your cheese does not scorch.

  6. Let it simmer until it is at your desired thickness.

  7. Let your Queso cool (or eat it out of the pot) and enjoy!
