INGREDIENTS
2 Slices of Thick Cut Sourdough or Italian Bread
1 Egg per slice of Bread
Softened Butter
Olive Oil
Flaky Sea Salt
Roasted Red Peppers
Parmesan
DIRECTIONS
Put a pan on medium/high heat and drizzle some olive oil into the pan.
While your pan heats up, cut a medium sized hole out of the middle of your bread.
Butter the edges of your bread generously.
Place your bread buttered side down into your pan and let it toast for 30 seconds to a minute.
Crack your egg and pour it into the center of your bread.
Add in a few tablespoons of roasted red peppers around the edges of the bread to heat them up. Stir them frequently to get the edges.
Once your egg white is starting to cook through, flip your bread and allow your egg yolk to cook to your desired doneness.
Once your egg is finished cooking, plate your toast and place your roasted red peppers on top.
Grate fresh Parmesan on top, to your heart’s desire, and add a sprinkle of flaky sea salt and a drizzle of that olive oil.
Buon Appetito!
